Marinating Chicken

Brine the Chicken
In a large bowl, mix sweet tea, buttermilk, salt, and black pepper. Add chicken thighs, ensuring they are submerged. Cover and refrigerate for at least 4 hours, preferably overnight.
Preparing Sweet Tea Mayo

Make the Sweet Tea Mayo
In a small bowl, mix mayonnaise and sweet tea until well combined. Set aside in the refrigerator.
Making Pimento Cheese

Prepare Pimento Cheese
In a mixing bowl, combine cream cheese, sharp cheddar cheese, pimentos, garlic powder, onion powder, and salt. Mix until smooth and set aside.
Frying Chicken

Fry the Chicken
In a large bowl, combine flour, paprika, black pepper, and salt. Remove chicken from marinade, letting excess drip off, then dredge in flour mixture. Heat oil in a deep skillet over medium-high heat. Fry chicken for 6-8 minutes on each side or until golden brown and cooked through. Drain on paper towels.
Assembling Sandwich

Build the Sandwich
On the bottom half of each house roll, spread a generous amount of sweet tea mayo. Place a piece of fried chicken on top, add pimento cheese, lettuce, and pickles. Top with the other half of the roll.
