Make the Bourbon Soaked Chocolate Cake

    Prepare the Cake Batter

    Preheat your oven to 350°F (175°C). In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, combine the eggs, milk, oil, and vanilla extract. Mix the wet ingredients into the dry ingredients until well combined.

    Bake the Cake

    Pour the batter into a greased 9x13 inch baking pan. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely.

    Soak the Cake

    Once the cake is cooled, poke holes all over the top with a fork and brush the bourbon evenly over the surface. Allow it to soak for at least 30 minutes.

Make the Bing Cherry Cream

    Prepare the Cherry Cream

    In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form. Gently fold in the fresh Bing cherries.

Assemble the Cake

    Layer the Ingredients

    Spread half of the Bing cherry cream over the bourbon soaked chocolate cake. Top with a layer of vanilla ice cream, then spread the remaining Bing cherry cream on top.

    Chill and Serve

    Cover and freeze the assembled cake for at least 2 hours before serving. Garnish with additional cherries if desired.
