Cook the Pappardelle
In a large pot of salted boiling water, cook the pappardelle according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Sauté the Mushrooms
In a large skillet, heat the olive oil over medium heat. Add the wild mushrooms and sauté for about 5-7 minutes, or until they are tender and lightly browned.

Make the Sauce
Add the heavy cream to the skillet with the mushrooms and bring to a gentle simmer. Stir in the lemon juice, parsley, thyme, salt, and black pepper. Let it simmer for another 2-3 minutes.

Combine Pasta and Sauce
Add the cooked pappardelle to the skillet, tossing to coat the pasta in the sauce. If the sauce is too thick, add a bit of reserved pasta water until desired consistency is reached.

Serve
Remove from heat and stir in the grated Grana Padano cheese. Serve immediately, garnished with additional cheese and fresh herbs if desired.
