For the Jerk Fries

Prepare the Potatoes

Wash and cut the russet potatoes into thin fries. Soak them in cold water for at least 30 minutes.

Season and Fry

Drain and pat the fries dry. Toss with jerk seasoning and salt. Heat the oil in a deep fryer or large pot to 350°F (175°C) and fry the potatoes in batches until golden brown and crispy, about 5-7 minutes each batch.

For the Grilled Pineapple Ketchup

Grill the Pineapple

Preheat a grill to medium heat. Grill the diced pineapple until caramelized, about 5-7 minutes.

Make the Ketchup

In a bowl, combine grilled pineapple, ketchup, brown sugar, lime juice, and red pepper flakes. Mix until well combined.

For the Mango Lime Yogurt

Mix the Yogurt

In a bowl, mix plain yogurt with pureed mango, lime zest, and honey until smooth and creamy.

To Serve

Plate the Dish

Serve the jerk fries hot with grilled pineapple ketchup and mango lime yogurt on the side. Garnish with chopped scallions.
