Loaded Waffle Preparation

    Prepare the Potatoes

    Boil the potatoes until fork-tender, then drain and let cool slightly. Once cool, smash them gently with a fork or a potato masher. Season with salt and black pepper.

    Cook the Sausage and Bacon

    In a skillet over medium heat, cook the pork sausage until browned and fully cooked. Remove and set aside. In the same skillet, crisp the bacon slices until cooked to your liking, then crumble and set aside.

    Make the Sausage Gravy

    Using the drippings from the sausage, add a bit of butter if necessary, then stir in flour and cook for a minute. Gradually whisk in milk until smooth and thickened, season with salt and black pepper.

    Cook the Eggs

    In a separate pan, cook the eggs any style you prefer (fried, scrambled, poached) and season with salt and pepper.

    Assemble the Loaded Waffle

    Place a waffle on a plate, layer with smashed potatoes, cooked sausage, crumbled bacon, and pour sausage gravy over the top. Finally, add the cooked egg on top.
