Prepare the Fingerling Potatoes

Brush the Mahi Mahi fillets with olive oil and season with salt and pepper. Set aside to marinate for about 10 minutes.

Toss the asparagus and sea beans with olive oil, salt, and pepper. Grill for about 5-7 minutes until tender and slightly charred.

Place the seasoned Mahi Mahi fillets on the grill. Grill for about 4-5 minutes on each side or until the fish is opaque and flakes easily with a fork.

Slice the tomato and Fresno chili. In a bowl, combine the grilled vegetables, sliced tomato, and Fresno chili. Add the pickled red onion and Thai basil, tossing gently.
