    Make the Biscuits

    Preheat your oven to 425°F (220°C). In a large mixing bowl, whisk together flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the cheddar cheese and thyme. Gradually add milk until a soft dough forms. Roll out on a floured surface to about 1-inch thickness and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden.

    Prepare the Gravy

    In a large skillet over medium heat, cook the sausage and bacon until browned. Drain excess fat, leaving about 2 tablespoons in the pan. Sprinkle flour over the meat and stir to combine. Slowly whisk in milk and bring to a simmer. Cook until thickened, about 5-7 minutes. Season with black pepper to taste.

    Cook the Eggs

    While the gravy is thickening, cook the eggs to your liking in a separate pan (fried, scrambled, etc.).

    Serve

    To serve, place a biscuit on a plate, top with sausage and bacon gravy, and add your cooked eggs on the side. Serve with smash fried potatoes.
