Prepare the Fries
Peel and cut the potatoes into thin strips. Toss with olive oil, salt, and pepper. Spread on a baking sheet and bake in a preheated oven at 425°F (220°C) for 25-30 minutes or until golden and crispy.
Caramelize the Onions
Slice the onion thinly. In a skillet, heat a tablespoon of olive oil over medium heat. Add the onions and cook slowly until they are golden brown and caramelized, about 15-20 minutes. Stir occasionally.
Cook the Bacon
In a separate pan, cook the bacon over medium heat until crispy. Remove and drain on paper towels.
Make Roasted Garlic Aioli
Mash the roasted garlic cloves in a bowl. Mix with mayonnaise, a pinch of salt, and pepper to taste.
Assemble the Burger
On the bottom half of the brioche bun, spread a generous amount of roasted garlic aioli. Place the cooked beef patty on top, followed by a slice of white cheddar cheese, crispy bacon, and caramelized onions. Top with the other half of the bun.
Serve
Serve the Bellwether Burger with a side of salt and pepper fries.
