    Prepare the Mustard Aioli

    In a bowl, combine mayonnaise, Dijon mustard, lemon juice, and a pinch of salt and pepper. Mix well and set aside.

    Prepare the Beef Tartare

    Finely chop the beef tenderloin and place it in a mixing bowl. Add salt, pepper, and a drizzle of olive oil. Mix to combine.

    Prepare the Black Garlic Molasses

    Mash the black garlic cloves into a paste and mix with a little olive oil and balsamic vinegar to create a molasses-like consistency.

    Char the Radicchio

    Halve the radicchio and grill or char it in a hot pan with olive oil until slightly wilted and charred. Season with salt and pepper.

    Cured Egg Yolk

    If desired, cure the egg yolks by placing them in a mixture of salt and sugar for 24 hours, then rinse and dry.

    Assemble the Dish

    On a plate, create a mound of the beef tartare. Top with a dollop of mustard aioli, black garlic molasses, cured egg yolk, and sprinkle with cured mullet roe. Serve with charred radicchio and crostini on the side.
