    Marinate the Steak

    In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, salt, and pepper. Add the hanger steak to the marinade, ensuring it is fully coated. Cover and refrigerate for at least 1 hour (or up to overnight).

    Prepare the Roasted Corn Puree

    If using fresh corn, grill or roast the corn until charred. Allow to cool, then cut kernels off the cob. Blend the corn in a food processor until smooth, adding a little olive oil if necessary. Season with salt and pepper to taste.

    Pickle the Red Cabbage and Red Onion

    In separate bowls, combine shredded red cabbage and sliced red onion with vinegar, salt, and a pinch of sugar. Let sit for at least 30 minutes.

    Cook the Steak

    Preheat a grill or cast iron skillet over medium-high heat. Remove the steak from the marinade and discard the marinade. Grill the steak for about 4-5 minutes per side for medium-rare, or to your desired doneness. Let rest for 5 minutes before slicing.

    Cook the Shishito Peppers

    In the same grill or skillet, add shishito peppers and cook for about 2-3 minutes until blistered and tender. Season with salt.

    Plate the Dish

    Slice the hanger steak and arrange it on a plate. Serve with roasted corn puree, blistered shishito peppers, pickled red cabbage, pickled red onion, and a sprinkle of sumac.
