    Prepare the Ingredients

    Wash and chop the mixed vegetables (carrots, bell peppers, peas, and potatoes) into bite-sized pieces. Chop the onion, and mince the garlic and ginger.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent. Then add the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

    Add Spices

    Stir in the curry powder and cook for 1 minute, allowing the spices to bloom and enhance their flavor.

    Incorporate Vegetables

    Add the chopped mixed vegetables to the pot, stirring well to coat them with the onion and spice mixture. Sauté for about 5 minutes.

    Add Liquids

    Pour in the coconut milk and vegetable broth. Stir well to combine all ingredients, then bring the mixture to a simmer.

    Season and Simmer

    Add salt and black pepper to taste. Let the curry simmer for approximately 15-20 minutes, or until the vegetables are tender and the sauce has thickened slightly.
