Steak Preparation

Season the Steak
Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper. Let the steaks sit at room temperature for 30 minutes.

Cook the Steak
Heat a large skillet over medium-high heat. Add olive oil and allow it to heat until shimmering. Carefully place the steaks in the skillet. Cook for 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

Rest the Steak
Remove the steaks from the skillet and let them rest on a cutting board for at least 5 minutes before slicing.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick). Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

Bake the Fries
Drain the soaked potatoes and pat them dry with paper towels. Toss the potato strips with olive oil and salt. Spread them evenly on the prepared baking sheet. Bake for 30-35 minutes, flipping halfway through, until golden and crispy.
