Cake Preparation

Preheat the Oven
Preheat your oven to 425°F (220°C) to ensure it's hot enough for baking the lava cakes.

Melt Chocolate and Butter
In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until the mixture is completely melted and smooth.

Mix Sugar and Eggs
In a separate mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened.

Combine Mixtures
Gently fold the melted chocolate mixture into the egg mixture using a spatula until fully combined.

Add Dry Ingredients
Sift the all-purpose flour and salt into the chocolate and egg mixture. Add the vanilla extract and fold gently until just combined. Be careful not to overmix.

Fill Ramekins
Pour the batter evenly into the prepared ramekins, filling each about 2/3 full.

Bake
Place the ramekins on a baking tray and bake for 12-14 minutes, or until the edges are firm but the center is soft.

Cool and Serve
Remove the cakes from the oven and let them cool for 1 minute. Carefully run a knife around the edges and invert each ramekin onto a plate. Serve immediately with a scoop of vanilla ice cream.
