    Rinse the Rice

    Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.

    Prepare the Vegetables

    Dice the carrots, potatoes, and chop the green beans. Set aside the green peas, and slice the onion and chop the tomato.

Cooking

    Sauté the Spices

    In a large pot, heat the oil or ghee over medium heat. Add cumin seeds, cinnamon stick, cloves, and cardamom pods. Sauté for about 1 minute until fragrant.

    Cook the Onions

    Add the sliced onion to the pot and sauté until golden brown, about 5-7 minutes.

    Add Vegetables and Spices

    Stir in the diced carrots, potatoes, green beans, and chopped tomato. Cook for 5 minutes, then add turmeric powder, garam masala, salt, and black pepper. Mix well.

    Add Rice and Water

    Add the soaked and drained basmati rice to the pot and pour in the water. Stir gently to combine.

    Cook the Biryani

    Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it cook for 20 minutes or until the rice is tender and has absorbed all the water.

Finishing Touches

    Fluff and Serve

    Remove the pot from heat. Let it sit covered for an additional 5 minutes. Fluff the rice with a fork, then mix in the chopped coriander leaves and lemon juice before serving.
