Sponge Cake Preparation

    Preheat your oven to 350°F (175°C).

    Beat Eggs and Sugar

    In a mixing bowl, beat the eggs and granulated sugar together until the mixture is thick and pale, about 5 minutes.

    Combine Dry Ingredients

    In a separate bowl, whisk together the all-purpose flour and baking powder.

    Fold Dry Ingredients

    Gently fold the dry ingredients into the egg mixture until just combined.

    Bake

    Spread the batter into a greased and floured baking pan. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

    Allow the sponge cake to cool completely in the pan before removing.

Mascarpone Mixture Preparation

    Whip Cream

    In a mixing bowl, whip the heavy cream until soft peaks form.

    Combine Mascarpone and Sugar

    In another bowl, combine the mascarpone cheese, 1 tablespoon of sugar, and vanilla extract, mixing until smooth.

    Fold in Whipped Cream

    Gently fold the whipped cream into the mascarpone mixture until fully combined.

Assembly

    Prepare Coffee Mixture

    In a shallow dish, combine the brewed coffee and coffee liqueur (if using).

    Dip Ladyfingers

    Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.

    Layer Ingredients

    In a serving dish, create a layer of soaked ladyfingers, followed by a layer of the mascarpone mixture. Repeat until all ingredients are used, finishing with the mascarpone mixture on top.

    Chill

    Cover and refrigerate the assembled tiramisu for at least 4 hours or overnight to set.

Topping

    Dust with Cocoa Powder

    Before serving, dust the top of the tiramisu with cocoa powder and sprinkle with dark chocolate shavings.
