Preparation of Stuffing

    Rinse and Soak Rice

    Rinse the long-grain rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.

    Cook Onion

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.

    Mix Ingredients

    In a large bowl, combine the drained rice, sautéed onion, chopped parsley, dill, chopped tomato, salt, black pepper, and lemon juice. Mix thoroughly to combine all ingredients.

Preparing Grape Leaves

    Prepare Grape Leaves

    If using fresh grape leaves, blanch them in boiling water for 2 minutes, then transfer them to a bowl of ice water. If using jarred leaves, rinse them under cold water to remove excess brine.

    Stuff the Leaves

    Lay a grape leaf flat on a clean surface, stem end towards you. Place about 1 tablespoon of the rice mixture at the base of the leaf. Fold in the sides and roll from the base to the tip tightly, forming a small parcel. Repeat with remaining leaves and filling.

Cooking the Stuffed Leaves

    Arrange and Cook

    Place a layer of unused grape leaves or a heatproof plate at the bottom of a large pot to prevent sticking. Arrange the stuffed grape leaves seam side down in the pot. Pour 2 cups of water over the leaves, and drizzle with the remaining olive oil.

    Simmer

    Cover the pot and simmer over low heat for about 45 minutes, or until the rice is fully cooked and the leaves are tender.

    Serve

    Remove from heat and let cool slightly. Serve warm or at room temperature, garnished with lemon slices.
