Prepare the Ingredients
Gather all ingredients. Dice the pancetta into small pieces and grate the Parmesan cheese. Set aside.

Cook the Spaghetti
In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the spaghetti.

Cook the Pancetta
In a large skillet, heat the olive oil over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes. Remove from heat.

Prepare the Sauce
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined. Set aside.

Finish the Carbonara
Quickly pour the egg and cheese mixture over the hot pasta, tossing vigorously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve
Plate the spaghetti carbonara, garnishing with extra Parmesan and additional black pepper as desired. Serve immediately.
