Rinse the Rice
In a fine mesh strainer, rinse 1 cup of rice under cold water until the water runs clear. This helps remove excess starch and prevent the pudding from becoming too gummy.

Cook the Rice
In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed and the rice is tender.

Simmer the Pudding
Reduce the heat to low and let the mixture simmer uncovered for about 20-25 minutes, stirring frequently to prevent sticking. The pudding should thicken and become creamy.

Add Flavorings
Once the pudding has thickened, stir in 1 tsp of vanilla extract and 2 tbs of butter until fully melted and incorporated.

Serve
Remove the pudding from heat and let it cool slightly. Spoon into individual serving bowls and sprinkle with ground cinnamon to taste before serving.
