Juicing the Lemons
Cut the lemons in half and juice them using a citrus juicer or by hand. You should have about 1 cup of fresh lemon juice.

Preparing the Mint Syrup
In a small saucepan, combine 1 cup of water and 1 cup of granulated sugar. Bring to a gentle boil over medium heat, stirring until the sugar is fully dissolved. Add 1 cup of fresh mint leaves to the syrup and remove from heat. Let it steep for 30 minutes.

Straining the Syrup
After steeping, strain the mint syrup through a fine mesh strainer to remove the mint leaves, pressing lightly to extract all the syrup. Set aside.

In a large pitcher, combine the fresh lemon juice, the strained mint syrup, and 3 cups of cold water. Stir well to combine.
