Mousse Preparation

    Prepare the Mango Puree

    Peel and chop the ripe mangoes. Blend the chopped mangoes in a food processor or blender until smooth. Measure out 2 cups of mango puree and set aside.

    Dissolve the Gelatin

    In a small bowl, combine the gelatin powder with 2 tablespoons of water. Let it sit for about 5 minutes to bloom, then heat it in the microwave for about 10 seconds until fully dissolved. Do not let it boil.

    Mix the Mango Puree

    Add the dissolved gelatin to the mango puree along with 1 tablespoon of granulated sugar and 1 teaspoon of vanilla extract. Mix well until fully incorporated.

    Whip the Cream

    In a separate bowl, whip the heavy cream using a hand mixer or stand mixer until soft peaks form. Be careful not to overwhip.

    Fold the Mixtures Together

    Gently fold the whipped cream into the mango mixture in three additions. Start by adding a small amount of whipped cream to lighten the mango mixture, then fold in the rest until no white streaks remain.

    Chill the Mousse

    Divide the mousse mixture into serving cups or bowls. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.

Garnishing

    Prepare the Garnish

    Before serving, slice the remaining mango into thin slices and set aside. Take the mousse out of the refrigerator.

    Serve

    Top each serving of mousse with a slice of mango and a few mint leaves for garnish. Serve chilled and enjoy!
