Lamb Marinade

Method

Marinating the Lamb

  1. 1

In a large bowl, combine the minced garlic, ground cumin, ground coriander, paprika, olive oil, lemon juice, salt, and black pepper. Mix well to create the marinade.

  2. 2

Add the cubed lamb shoulder to the marinade, ensuring that all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight.

Preparing the Kebabs

  1. 3

Soak wooden skewers in water for at least 30 minutes if using them, to prevent burning.

  2. 4

Preheat your grill to medium-high heat.

  3. 5

Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece for even cooking.

Grilling the Kebabs

  1. 6

Place the skewers on the grill. Cook for about 10-12 minutes, turning occasionally, until the lamb is browned and reaches your desired level of doneness.

  2. 7

Remove the kebabs from the grill and let them rest for a few minutes before serving.

Serving

  1. 8

Warm the pita bread on the grill for 1-2 minutes until soft and pliable.

  2. 9

Serve the kebabs on the warm pita bread, topped with tzatziki sauce, chopped parsley, cherry tomatoes, and slices of red onion.
