    Prepare the ingredients

    Chop the onion, tomatoes, garlic, and ginger. Cut the lamb into bite-sized pieces.

    Sauté the aromatics

    In a large pot, heat the oil over medium heat. Add the chopped onions and sauté until they turn translucent, about 5-7 minutes. Then add the garlic and ginger, cooking for another 2-3 minutes until fragrant.

    Add spices

    Stir in the ground cumin, coriander, turmeric, garam masala, and red chili powder. Cook for 1-2 minutes, allowing the spices to toast slightly.

    Brown the lamb

    Add the lamb pieces to the pot, stirring to coat them with the spice mixture. Cook for about 5-6 minutes until the lamb is browned on all sides.

    Add tomatoes and liquids

    Stir in the chopped tomatoes, coconut milk, and broth. Bring the mixture to a simmer.

    Reduce heat to low, cover the pot, and let it cook for 2-3 hours, until the lamb is tender and the flavors are well combined. Stir occasionally.
