    Wash the Rice

    Thoroughly rinse the basmati rice under cold water until the water runs clear to remove excess starch.

    Soak the Rice

    Soak the rinsed rice in water for about 30 minutes, then drain.

Cooking

    Cook the Rice

    In a large pot, bring 4 cups of milk to a boil. Add the soaked and drained rice to the boiling milk.

    Add Sugar and Cardamom

    Reduce the heat to low. Stir in the sugar and lightly crushed cardamom pods. Cook for about 20-25 minutes, stirring occasionally until the rice is soft and the mixture thickens.

    Prepare the Nuts

    In a separate pan, lightly toast the sliced almonds, chopped cashews, and raisins until golden. This should take about 3-4 minutes over medium heat.

    Combine and Garnish

    Once the kheer has reached the desired consistency, remove from heat. Stir in the toasted nuts and saffron. Let it cool slightly before serving.
