Soak the Calamari
In a bowl, combine the calamari rings and buttermilk. Make sure the calamari is fully submerged in the buttermilk. Cover and refrigerate for at least 30 minutes to tenderize the calamari.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

Bread the Calamari
Remove the calamari from the buttermilk, allowing any excess to drip off. Dredge the calamari rings in the breading mixture, ensuring they are fully coated.

Fry the Calamari
Once the oil is hot, carefully add the breaded calamari rings in batches to avoid overcrowding. Fry for 2-3 minutes or until they turn golden brown. Use a slotted spoon to remove the fried calamari and transfer them to a plate lined with paper towels to drain excess oil.

Serve the fried calamari hot with lemon wedges on the side for squeezing over the top.
