Marinated Chicken

Prepare the Marinade
In a large bowl, combine olive oil, minced garlic, ground cumin, ground coriander, ground paprika, ground turmeric, ground cinnamon, salt, black pepper, lemon juice, and plain yogurt. Mix well to form a marinade.

Marinate the Chicken
Add the boneless, skinless chicken thighs to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight.

Cook the Chicken
Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Allow the chicken to rest for a few minutes before slicing.

Make the Garlic Sauce
In a small bowl, combine minced garlic, mayonnaise, lemon juice, and salt. Mix until smooth and well combined. Set aside in the refrigerator until ready to serve.
Assembly

Assemble the Shawarma
Slice the grilled chicken into strips. Take a piece of pita bread and layer it with sliced chicken, cucumber pickles, and chopped fresh parsley. Drizzle with garlic sauce.

Wrap the pita bread around the filling and serve immediately with extra garlic sauce on the side.
