Preparing the Dough

    Thaw Phyllo Dough

    Remove the phyllo dough from the freezer and let it thaw in the refrigerator overnight, or at room temperature for about 2 hours before use.

    Prepare Baking Dish

    Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with a little butter.

    Melt Butter

    In a saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and set aside.

Making the Filling

    Combine Filling Ingredients

    In a mixing bowl, combine the chopped walnuts, chopped pistachios, ground cinnamon, and granulated sugar. Mix well to ensure the nuts are evenly coated with the sugar and cinnamon.

Assembling Baklava

    Layer the Phyllo Dough

    Take one sheet of phyllo dough, place it in the greased baking dish, and brush it lightly with melted butter. Repeat this process for about 8 sheets, layering and brushing each with butter.

    Add Filling

    Evenly spread a portion of the nut filling over the buttered phyllo layers.

    Continue Layering

    Continue layering phyllo sheets (about 4 sheets at a time, brushing each with butter), followed by the nut filling. Repeat until all filling is used, finishing with about 8 more layers of phyllo dough on top.

    Cut the Baklava

    Using a sharp knife, cut the assembled baklava into diamond or square shapes, making sure to cut through all layers.

    Bake

    Bake the baklava in the preheated oven for about 45-50 minutes, or until the top is golden brown and crisp.

Making the Syrup

    Prepare the Syrup

    While the baklava is baking, in a saucepan, combine the granulated sugar, water, and honey. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves.

    Add Vanilla

    Once boiling, reduce the heat and let it simmer for about 10 minutes. Remove from heat and stir in the vanilla extract. Allow the syrup to cool.

Finishing Touches

    Pour Syrup over Baklava

    When the baklava is done baking, remove it from the oven and immediately pour the cooled syrup evenly over the hot baklava, ensuring it seeps into the cuts.
