Directions
- 1
Cook the Pasta
In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
- 2
Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Stir in the Calabrian chili paste and cook for another minute.
- 3
Combine Ingredients
Add the tomato sauce and vodka to the skillet. Bring to a simmer and let cook for about 5 minutes. Then, stir in the heavy cream and season with salt and black pepper to taste.
- 4
Mix Pasta and Sauce
Add the cooked rigatoni to the skillet and toss to coat in the sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- 5
Serve
Serve the rigatoni topped with burrata cheese, grated Parmesan, and fresh basil. Enjoy!
