Prepare the Sausage
Preheat your oven to 400°F (200°C). Cut the Connecuh sausage into bite-sized pieces, about 1-2 inches long.

Roll Out the Puff Pastry
On a lightly floured surface, roll out the sheet of puff pastry to about 1/8 inch thick. Cut the pastry into rectangles large enough to wrap around the sausage pieces.

Wrap the Sausage
Take each piece of sausage and wrap it with a piece of puff pastry. Ensure that the pastry covers the sausage completely. Place the wrapped sausages seam side down on a baking sheet lined with parchment paper.

Apply Egg Wash
In a small bowl, beat the egg and brush it over the pastry to give it a golden color once baked.

Bake
Bake in the preheated oven for 15-20 minutes, or until the pastry is puffed and golden brown.

Make Maple-Mustard Aioli
In a small bowl, mix together the maple syrup and Dijon mustard until well combined.

Serve
Serve the pigs in a blanket hot out of the oven with the maple-mustard aioli and blackberry conserva on the side.
