    Prepare the Mojo Braised Pork

    In a large bowl, marinate the pork shoulder with mojo marinade for at least 2 hours, preferably overnight. Preheat the oven to 300°F (150°C). Place the marinated pork in a roasting pan with a lid and braise for 4-5 hours, or until the pork is tender and easily shredded.

    Shred the Pork

    Once cooked, remove the pork from the oven and let it rest for 15 minutes. Shred the pork with two forks and mix it with the remaining marinade from the pan.

    Prepare the Sandwich

    Slice the ciabatta rolls in half. Spread the lime mayo on both halves. Layer the shredded mojo pork, capicolla, and provolone cheese on the bottom half of each roll. Add spicy pickles and a drizzle of mustard before placing the top half of the roll.

    Toast the Sandwiches

    Preheat a pan or griddle over medium heat. Place the assembled sandwiches on the pan and press down gently. Toast for about 3-4 minutes on each side until the bread is golden brown and the cheese is melted.

    Serve

    Remove from the pan, slice in half if desired, and serve immediately with extra spicy pickles on the side.
