Prepare the Chicken
Season the chicken breasts with salt and pepper on both sides. Dredge each chicken breast in flour, then dip in beaten eggs, and finally coat with panko breadcrumbs.

Fry the Chicken
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and fry until golden brown, about 4-5 minutes per side. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.

Melt the Cheese
In the same skillet, reduce the heat to low and place the fried chicken back in. Top each piece with mozzarella cheese and cover with a lid until the cheese melts, about 2-3 minutes.

Assemble the Sammy
Spread basil pesto on the bottom half of the brioche bun. Add the melted cheese chicken cutlet, drizzle with spicy vodka sauce, and top with the other half of the bun.

Cut the sandwich in half if desired and serve immediately with a side of fries or salad.
