    Prepare the Beef

    In a large pot, heat olive oil over medium-high heat. Season the prime chuck with salt and black pepper. Sear the beef on all sides until browned, about 4-5 minutes per side. Remove the beef and set aside.

    Create the Braising Liquid

    In the same pot, add red wine and scrape the bottom to deglaze. Bring to a boil, then return the beef to the pot. Cover and reduce to a simmer. Cook for about 2-3 hours until the beef is tender.

    Cook the Pasta

    In a separate pot, bring salted water to a boil and cook the pappardelle pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Gremolata

    In a small bowl, mix panko breadcrumbs with chopped basil and a drizzle of olive oil. Season with a pinch of salt and pepper.

    Combine & Serve

    Once the beef is tender, shred it into bite-sized pieces. Mix the shredded beef with the braising liquid and cooked pappardelle. Serve topped with gremolata and grated Parmesan cheese.
