Pasta Preparation

    Boil the Lasagna Noodles

    In a large pot, bring 4 cups of water to a boil. Add 1 tsp of salt. Once boiling, add the lasagna noodles and cook according to package instructions until al dente. Drain and set aside.

Vegetable Filling

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 cloves of minced garlic and sauté for 1 minute until fragrant. Add 1 cup of diced zucchini, 1 cup of diced bell pepper, and 1 cup of sliced mushrooms. Cook for about 5-7 minutes until the vegetables are tender.

    Add Spinach

    Stir in 2 cups of chopped spinach and 1 teaspoon of Italian seasoning. Cook for an additional 2-3 minutes until the spinach has wilted. Remove from heat and set aside.

Cheese Mixture

    Prepare the Cheese Mixture

    In a medium bowl, mix together 15 oz of ricotta cheese, 1 large egg, 1 cup of grated Parmesan cheese, and 1 teaspoon of salt. Stir until well combined.

Assembling the Lasagna

    Layer the Ingredients

    Preheat your oven to 375°F (190°C). In a 9x13 inch baking dish, spread a thin layer of the vegetable filling on the bottom. Place 3 lasagna noodles on top of the filling. Spread half of the cheese mixture over the noodles, followed by half of the remaining vegetable filling. Sprinkle with 1 cup of shredded mozzarella cheese.

    Repeat the Layers

    Repeat the layering process: add another 3 noodles, the remaining cheese mixture, the remaining vegetable filling, and another cup of mozzarella cheese.

    Final Layer

    Top with the last 3 noodles, the remaining 1 cup of mozzarella cheese, and 1 cup of grated Parmesan cheese.

Baking

    Bake the Lasagna

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes until the cheese is bubbly and golden.

Serving

    Cool and Serve

    Allow the lasagna to cool for 10 minutes before slicing and serving. Enjoy your delicious vegetarian lasagna!
