Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together in a microwave in 30-second intervals, stirring in between, until smooth.

  3. 3

    Prepare the Batter

Once melted, stir in the powdered sugar until well combined. Then mix in the eggs and egg yolks one at a time, mixing thoroughly after each addition. Add the vanilla extract and a pinch of salt, and mix until smooth.

  4. 4

    Incorporate Flour

Gently fold in the all-purpose flour until just combined. Be careful not to overmix.

Baking

  1. 5

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.

  2. 6

    Bake the Cakes

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

  3. 7

    Cool Slightly

Remove the cakes from the oven and let them cool for 1-2 minutes. Run a knife around the edges to loosen the cakes.

Serving

  1. 8

    Serve the Cakes

Invert each ramekin onto a plate and gently lift off the ramekin. Serve immediately with a scoop of vanilla ice cream and fresh berries on the side.
