Method

Prepare Chickpeas

    Rinse and Drain

    Open the canned chickpeas and pour them into a colander. Rinse them under cold running water to remove excess sodium and drain well.

    Spice the Chickpeas

    In a large skillet, heat the olive oil over medium heat. Once hot, add the rinsed chickpeas to the skillet.

    Add Spices

    Sprinkle the cumin, paprika, cayenne pepper, salt, and black pepper over the chickpeas. Stir gently to coat the chickpeas evenly with the spices.

    Cook Chickpeas

    Cook the chickpeas for about 8-10 minutes, stirring occasionally until they are heated through and slightly crispy.

Prepare Coconut Yogurt

    Mix Yogurt

    In a small bowl, combine the coconut yogurt, lime juice, and maple syrup. Stir until smooth and well mixed.

Garnish

    Chop Coriander

    Finely chop the fresh coriander (cilantro) and set aside.

    Serve

    Once the chickpeas are cooked, remove them from heat. Serve the spiced chickpeas in a bowl, topped with a generous dollop of coconut yogurt, sprinkled with fresh coriander, and accompanied by lime wedges.
