Preheat the Oven
Preheat your oven to 200°C (400°F).

Prepare the Onion and Garlic
Finely chop the onion and mince the garlic cloves.
Make the Filling

Combine Ingredients
In a mixing bowl, combine the sausage meat, chopped onion, minced garlic, dried mixed herbs, salt, and black pepper. Mix until well combined.
Assemble the Rolls

Roll Out Pastry
Lightly flour your work surface with all-purpose flour and roll out the puff pastry sheets to about 0.5 cm thick.

Cut the Pastry
Cut each sheet into rectangles, approximately 10 cm by 15 cm.

Fill the Pastry
Place a line of sausage filling along the center of each pastry rectangle.

Roll and Seal
Roll the pastry over the filling to form a log, then seal the edges by pressing them together with your fingers.

Prepare Egg Wash
In a small bowl, whisk together the egg and milk.

Place in Oven
Place the assembled sausage rolls on a baking tray lined with parchment paper.

Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and crisp.
Serve

Serve with HP Sauce
Remove from the oven and let cool slightly. Serve warm with HP sauce on the side.
