    Rinse the Quinoa

    Place the quinoa in a fine-mesh strainer and rinse under cold water for about 2 minutes to remove the bitter coating.

    Cook the Quinoa

    In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Prepare the Vegetables

    While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing until translucent (about 3-4 minutes).

    Add Bell Peppers and Spices

    Stir in the chopped bell peppers, cumin, paprika, salt, and black pepper. Cook for an additional 5-7 minutes, until the bell peppers are tender.

    Combine Ingredients

    Add the cooked quinoa and drained chickpeas to the skillet. Stir well to combine and heat through for another 3-4 minutes. Remove from heat, add lemon juice and chopped parsley, and mix well.

    Plate and Garnish

    Serve the quinoa mixture on a plate. Top with sliced avocado, crumbled feta cheese, and toasted pine nuts.
