Method

Preparing the Sea Bass

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375-400°F or 190-200°C).

    Season the Fish

    Pat the sea bass fillets dry with a paper towel. Brush both sides with olive oil, then season with salt and black pepper.

    Grill the Fish

    Place the seasoned sea bass fillets on the grill and cook for 4-5 minutes on each side, or until the fish flakes easily with a fork. Squeeze fresh lemon juice over the fillets before serving.

Preparing the Asparagus

    Trim the Asparagus

    Trim the woody ends off the asparagus spears.

    Season the Asparagus

    In a mixing bowl, toss the asparagus with olive oil, salt, and black pepper.

    Grill the Asparagus

    Place the asparagus on the grill alongside the sea bass. Grill for about 5-7 minutes, turning occasionally, until tender and slightly charred.

Making the Hollandaise Sauce

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat and let it cool slightly.

    Whisk the Egg Yolks

    In a heatproof bowl, whisk the egg yolks and lemon juice until pale and frothy.

    Combine and Whisk

    Place the bowl over a saucepan of simmering water (double boiler) and continue whisking while slowly drizzling in the melted butter. Whisk until the sauce thickens to your desired consistency.

    Season the Sauce

    Remove from heat and season with salt and cayenne pepper. Keep warm until ready to serve.
