Method

For the Grilled Salmon

  1. 1

    Prepare the Salmon

Preheat your grill to medium-high heat. Pat the salmon fillets dry with paper towels and brush both sides with olive oil. Season with salt and black pepper.

  2. 2

    Grill the Salmon

Place the salmon fillets skin side down on the grill. Grill for about 6-8 minutes, then carefully flip and grill for another 4-6 minutes, or until the salmon is cooked through and flakes easily with a fork. Squeeze fresh lemon juice over the salmon just before removing it from the grill.

For the Lemon Butter Sauce

  1. 3

    Melt the Butter

In a small saucepan over medium heat, melt the unsalted butter. Add minced garlic and sauté for about 1 minute until fragrant.

  2. 4

    Finish the Sauce

Stir in chopped parsley and lemon juice. Season with salt and black pepper to taste. Remove from heat and set aside.

For the Seasonal Vegetables

  1. 5

    Prepare the Vegetables

In a large bowl, toss the sliced zucchini, bell pepper, and trimmed asparagus with olive oil, salt, and black pepper.

  2. 6

    Cook the Vegetables

Place the seasoned vegetables on a grill or in a grill basket. Grill for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.
