Steak Preparation

Prepare the Steak
Remove the flat iron steaks from the refrigerator and allow them to come to room temperature for about 30 minutes.

Season the Steaks
Rub the steaks with olive oil and season both sides generously with salt and black pepper.

Cook the Steaks
Cook the steaks for 5-7 minutes on each side for medium-rare, or until they reach your desired doneness.

Rest the Steaks
Remove from heat and let the steaks rest for 5 minutes before slicing.
Fries Preparation

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick) for fries.

Rinse and Dry
Rinse the cut potatoes under cold water to remove excess starch, then pat them dry with a kitchen towel.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the potato strips in batches to avoid overcrowding. Fry until golden brown and crispy, about 4-5 minutes.

Drain and Season
Remove fries with a slotted spoon and drain on paper towels. Season with salt to taste while still hot.
Bearnaise Sauce Preparation

Prepare the Shallots
In a small saucepan, combine shallots, white wine vinegar, and chopped tarragon. Heat over medium heat until the shallots are soft and the liquid has reduced by half.

Strain the Mixture
Remove from heat and let cool slightly. Strain the mixture, retaining the liquid and discarding the shallots.

Combine Egg Yolks and Liquid
In a medium bowl, whisk together the egg yolks and the strained liquid until combined.

Add the Butter
Slowly drizzle in the melted unsalted butter while continuing to whisk until the sauce is creamy and thick.

Finish the Sauce
Stir in the lemon juice, and season with salt and black pepper to taste.
