Falafel Preparation

    Soak the Chickpeas

    In a large bowl, soak the dried chickpeas in water for at least 8 hours or overnight. Drain and rinse before using.

    Make the Falafel Mixture

    In a food processor, combine the soaked chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely ground but not pureed.

    Chill the Mixture

    Transfer the falafel mixture to a bowl, cover it with plastic wrap, and refrigerate for at least 30 minutes to help it firm up.

    Form the Falafel Balls

    Using your hands, form the chilled mixture into small balls or patties, about 1.5 inches in diameter.

    Fry the Falafel

    Heat the oil in a deep frying pan over medium heat. Once hot, carefully add the falafel balls in batches, frying for 3-4 minutes on each side until golden brown and crispy. Drain on paper towels.

    Preheat the oven to 400°F (200°C). Peel and chop the carrots into bite-sized pieces. Spread them on a baking sheet, drizzle with olive oil, and sprinkle with salt. Roast for 25-30 minutes until tender and caramelized.

    Blend the Hummus

    In a blender or food processor, add the roasted carrots, tahini, lemon juice, garlic, olive oil, salt, and water. Blend until smooth and creamy. Adjust seasoning to taste.
