Crayfish & Prawn Filling

    Prepare the seafood filling

    In a medium bowl, combine the crayfish tails and cooked prawns. Add mayonnaise, Dijon mustard, chopped dill, lemon juice, salt, and black pepper. Mix gently until well combined.

    Add herbs

    Fold in the chopped chives into the seafood mixture and adjust seasoning if necessary.

Rolls

    Prepare the rolls

    Slice the baguette rolls in half lengthwise and spread butter on the cut sides. Heat a skillet over medium heat and toast the rolls, butter side down, until golden brown.

    Assemble the rolls

    Fill each toasted roll with the crayfish and prawn filling. Press lightly to secure the filling in the rolls.

    Prepare the potatoes

    Wash and peel the potatoes. Cut them into thin strips to create fries.

    Fry the potatoes

    Heat vegetable oil in a deep frying pan or fryer to 180°C (350°F). Carefully add the potato strips in batches and fry until golden and crispy, about 4-6 minutes. Remove and drain on paper towels, then season with salt to taste.
