Method

Preparing the Cod Fillet

    Sear the Cod

    Heat olive oil in a skillet over medium-high heat. Season the cod fillets with salt and black pepper. Once the oil is hot, place the cod fillets into the skillet and sear for about 3-4 minutes on each side, or until golden brown and cooked through. Remove from heat and set aside.

Braised Fennel & Jersey Royal Salad

    Cook the Jersey Royals

    Place the Jersey Royal potatoes in a pot of salted boiling water and cook for about 15-20 minutes, or until tender. Drain and set aside.

    Braised Fennel

    In a separate pan, slice the fennel bulb thinly. Add vegetable broth and white wine, then bring to a simmer. Add the sliced fennel, salt, and black pepper. Cover and braise for about 15 minutes, until the fennel is tender.

    Combine Salad Ingredients

    In a large bowl, combine the cooked Jersey Royal potatoes, braised fennel, fresh dill, and lemon juice. Toss gently to combine and season to taste with additional salt and pepper if desired.

Making the Herb Hollandaise

    Prepare the Hollandaise

    In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a saucepan of simmering water (double boiler). Slowly drizzle in melted butter while whisking continuously until the sauce thickens. Stir in the fresh herbs and season with salt and pepper to taste.
