Crust Preparation

Make the Crust
In a medium mixing bowl, combine graham cracker crumbs, sugar, melted butter, and salt. Mix until the crumbs are fully coated and the mixture resembles wet sand.

Press the Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Use the back of a measuring cup to create an even layer.

Bake the Crust
Preheat the oven to 350°F (175°C). Bake the crust for 8-10 minutes until it is lightly golden. Remove from the oven and let it cool.
Filling Preparation

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth and creamy. Gradually add sugar and beat until combined.

Add Other Ingredients
Add sour cream, vanilla extract, eggs (one at a time), and lemon juice, beating well after each addition until the mixture is smooth.

Pour Filling into Crust
Pour the cream cheese filling over the cooled crust in the springform pan.
Baking and Cooling

Bake the Cheesecake
Bake the cheesecake in the preheated oven for 50-60 minutes, or until the center is set and a slight jiggle remains.

Cool the Cheesecake
Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour. Then, remove it from the oven and refrigerate for at least 4 hours or overnight.

If desired, top the chilled cheesecake with fresh berries and a dusting of powdered sugar just before serving.
