Preparation of Croquette Mixture

1. Boil the Potatoes

Peel and cut the potatoes into chunks. Place them in a pot of salted water and bring to a boil. Cook for about 15-20 minutes until tender. Drain and let them cool slightly.

2. Mash the Potatoes

In a large bowl, mash the boiled potatoes until smooth.

3. Prepare the Mixture

In a saucepan over medium heat, melt the butter. Add the all-purpose flour and stir for about 2 minutes until it forms a roux. Gradually add the milk, stirring constantly until the mixture thickens.

4. Combine Ingredients

Add the thickened mixture to the mashed potatoes. Stir in the cheese, truffle oil, salt, and black pepper until well combined.

5. Chill the Mixture

Cover the mixture and refrigerate for at least 1 hour to firm up.

Forming and Frying Croquettes

6. Shape the Croquettes

Once chilled, take small portions of the mixture and roll them into balls or cylindrical shapes.

7. Prepare for Breading

Beat the eggs in a shallow dish. Place the breadcrumbs in another shallow dish.

8. Coat the Croquettes

Dip each croquette first into the beaten eggs, then roll them in the breadcrumbs until fully coated.

9. Heat the Oil

In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

10. Fry the Croquettes

Carefully add the croquettes to the hot oil in batches, frying for 3-4 minutes until golden brown and crispy. Remove and drain on paper towels.

11. Serve

Serve warm with a sprinkle of salt and extra truffle oil if desired.
