Calamari Preparation

Prepare the Squid
Start by cleaning and cutting the squid into rings if not pre-prepared. Pat them dry with paper towels to remove excess moisture.

Mix the Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well to ensure an even distribution of the spices.

Coat the Squid
Dip each squid ring into the beaten egg, allowing any excess to drip off. Then, dredge the squid in the flour mixture, ensuring they are fully coated.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the coated squid rings in batches, avoiding overcrowding the pan. Cook for about 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Spicy Aioli Preparation

Mix Aioli Ingredients
In a small bowl, whisk together the mayonnaise, minced garlic, lemon juice, and Sriracha sauce. Taste and adjust salt as needed.

Serve the crispy fried calamari hot with the spicy aioli on the side for dipping.
