Beef Tartare Preparation

    Prepare the Beef

    Finely dice the beef tenderloin using a sharp knife. Ensure the pieces are uniform for best texture.

    Chop Shallots and Capers

    Peel and finely chop the shallots. Rinse and chop the capers. Combine them with the diced beef in a mixing bowl.

    Mix Ingredients

    Add Dijon mustard, Worcestershire sauce, and egg yolk to the beef mixture. Season with salt and black pepper to taste. Mix well until all ingredients are incorporated.

Sourdough Toast Preparation

    Toast the Sourdough

    Brush the slices of sourdough bread with olive oil on both sides. Heat a skillet over medium heat and toast the bread until golden brown and crispy, about 3-4 minutes per side.

Assembly

    Plate the Tartare

    Using a ring mold or a spoon, shape the beef tartare mixture onto a plate.

    Serve the beef tartare immediately with the crispy sourdough toast on the side. Optionally garnish with additional capers or herbs.
