Cook the Prawns
In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the prawns and cook for about 3-4 minutes until they turn pink and opaque. Remove the prawns from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add another tablespoon of vegetable oil. Add minced garlic and ginger, sautéing for about 30 seconds until fragrant. Then, add the cubed eggplant and mushrooms. Cook for about 5-7 minutes until the vegetables are tender.

Prepare the Sauce
In a small bowl, mix together tamarind paste, soy sauce, and sugar until well combined.

Combine Ingredients
Once the eggplant and mushrooms are cooked, add the cooked prawns back into the skillet. Pour the sauce over the mixture and stir well to coat everything. Add the chopped red chilies and fresh basil leaves, cooking for another 2-3 minutes until everything is heated through.
