Preparation of Mussels

Clean the Mussels
Rinse the New Zealand green-lip mussels under cold running water, scrubbing the shells with a brush to remove any debris or barnacles. Remove the beards by pulling them away from the shell.

Preheat the Broiler
Set your oven to broil and let it preheat while you prepare the pesto.
Preparation of Asian Pesto

Blend the Ingredients
In a food processor, combine the fresh basil leaves, fresh cilantro leaves, garlic cloves, pine nuts, soy sauce, sesame oil, and lime juice. Blend until smooth.

Season the Pesto
Taste the pesto and add salt and black pepper to your liking. Blend again to combine.
Broiling the Mussels

Arrange the Mussels
Place the cleaned mussels on a baking sheet, open side up. Spoon a generous amount of the prepared Asian pesto onto each mussel.

Broil the Mussels
Place the baking sheet under the broiler for 5-7 minutes, or until the mussels are cooked through and the pesto is bubbling and slightly browned.

Remove the mussels from the oven and let them cool slightly. Serve warm on a platter with extra lime wedges on the side.
