Method

Preparation of Sea Bass

    Season the Fillets

    Pat the sea bass fillets dry with a paper towel. Season both sides of the fillets with salt and black pepper.

    Heat the Oil

    In a large skillet, heat the olive oil over medium heat.

    Grill the Fillets

    Once the oil is hot, add the sea bass fillets to the skillet. Grill for about 2-3 minutes on each side until they have a light golden color.

Infusion Preparation

    Combine Ingredients

    In a small bowl, combine fresh ginger, chopped scallions, lemon juice, orange juice, soy sauce, and sesame oil. Mix well.

    Prepare for Steaming

    Transfer the grilled sea bass fillets to a steamer basket lined with parchment paper. Pour the ginger, scallion, and citrus infusion over the fillets.

Steaming and Garnishing

    Steam the Fillets

    Place the steamer basket over a pot of simmering water. Cover and steam for 6-8 minutes, or until the fish is cooked through and flakes easily with a fork.

    Prepare Garnish

    While the fish is steaming, slice the red onion thinly and julienne the fresh ginger.

    Serve the Dish

    Once the sea bass is done, carefully remove from the steamer. Serve topped with the sliced red onion and julienned ginger.
