Preparation of Marinade

    Marinate the Beef

    In a mixing bowl, combine the red wine, soy sauce, minced garlic, grated ginger, black pepper, and cornstarch. Whisk until well combined. Cut the filet mignon into 1-inch cubes and add to the marinade. Mix to coat the beef thoroughly. Cover and refrigerate for at least 30 minutes, preferably overnight for more flavor.

Cooking the Potatoes

    Prepare the Potatoes

    In a pot, add cubed potatoes and cover with water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes or until fork-tender. Drain and set aside.

    Sauté the Potatoes

    In a skillet, heat olive oil over medium heat. Add the cooked potatoes and sauté until golden brown and crispy, about 5-7 minutes. Season with salt and set aside.

Cooking the Beef

    Wok the Beef

    In a wok or large skillet, heat a small amount of oil over high heat. Remove the marinated beef from the fridge and drain excess marinade. Add the beef to the hot wok in a single layer. Cook for 2-3 minutes without stirring to achieve a good sear, then toss and continue to cook for another 2-3 minutes until the beef is cooked to your desired doneness.

Assembly

    Plate the Dish

    On a large plate or serving platter, arrange a bed of mixed greens. Top with the sautéed potatoes and the cooked beef. Garnish with chopped fresh parsley.
